Sweet Chili Lime Shrimp

Ingredients

1 1/2 lbs Shrimp – Peeled And Deveined (About 70 shrimp)

Juice Of 3 Limes

1 Heaping Tbsp Minced Garlic

1 1/2 Cup Thai Sweet Chili Sauce

1 lime (for garnish)

Directions

In a bowl, mix together the lime juice, garlic, and Sweet Chili Sauce for a marinade.

Place the shrimp in the marinade, and allow to marinate at least 30 minutes in the refrigerator.

Pre heat grill to med hi.

Once marinated, make up skewers and then sprinkle each with Honey Mustard rub.

Place the skewers onto skewer rack above the grate and allow to cook 4-5 minutes. Flip them over to the other side and cook for an additional 4-5 minutes. (The shrimp are done when they turn pink).

Remove the shrimp and place on a serving plate garnished with a couple lime slices

Notes

1 1/2 lbs was filling for the 2 of us. Could do with less if this was paired with a hearty side dish.
Be careful not to overcook the shrimp. They don't take long.
Should try basting them with Chili Sauce just a minute before taking them off the grill next time.
Was able to make a 1/2 batch of the marinade and make up 4 chicken tenders and put them onto skewers.
